This is one of my all time favourite meals.

If you feel inspired to make it, here is how to:

1 medium size red onion 
1 Red pepper
1 Green pepper
1 Tin chopped tomatoes
1 Tin Chili beans
1 Tin mixed beans
1 Tin baked beans
1-2 tsp ground cumin
1 tsp chili
1 vegetable stock cube, crumbled
salt & pepper to taste

1/2 avocado per serving
Lime juice

Cut all the vegetables into small cubes and gently soften them in a bit of oil for a few minutes, add tomatoes, beans, stock cube and spices and gently simmer for 20-30 min until you have a nice and thick sauce. 
Serve in a big bowl with fresh avocado and a squeeze of lime juice on top. 
Very tasty and yet so simple - Enjoy

"A portrait of my children, once a week, every week, in 2013."

My Mother was here this weekend and we all went for a lovely walk at Mote Park, Maidstone. The weather was fantastic and the light was perfect for taking pictures like this.


A while ago I got inspired to make these wonderful small pancakes whilst reading this blog
They taste fantastic and are super healthy! 
(Well that is until you eat them with whipped cream and jam)

But if you choose to eat them with greek yoghurt and fresh fruit you have a guilt free snack or even breakfast? 

Ingredients :

2 ripe bananas
2 eggs
100ml rolled oats
100ml wholemeal flour
1 tsp ground cardamom 
a pinch of salt

Snoopy









I have a son who is mad about Snoopy, and look what I found on Ebay. 11 little Snoopy figures from the eighties, they are apparently collected from McDonalds' Happy Meals! What is even better is that I only paid 'peanuts' for them!! 

The little bag I made myself from some fabric I also found on Ebay.

I don’t know about you, but I am definitely ready for summer!

With all these sweet, juicy and inexpensive pineapples available at the supermarket right now, what better than make them in to delicious smoothies.

To make 2-3 glasses of smoothie you will need:

1 large pineapple, diced
1/2 tin of coconut milk (shake well before you open)
100ml of vanilla or coconut flavoured yoghurt
Ice

Blend it all into yummy, fluffy smoothies, pour and enjoy

Love is all around








Valentine's day is not something we normally celebrate, until when a few years ago Ophelia began to write us cards and give us little love notes on the day. We then decided to have a Valentine celebration each year as a family! Last year the kids and I were in Denmark on the 14th but we left a basket behind full of chocolates, heart-shaped love notes and beers to 'Daddy' - But this year we were all home and had time to prepare lots of valentine surprises for Alistair when he got back from work.
We baked pink meringue love cookies, chocolate brownies with raspberries and blew up red heart shaped balloons. 
We had a lovely evening together as a family around the dinner table and like a teenage disco, we ended the evening by dancing around in each others arms. It really was our own little Valentine's ball.

This week the weather has been a bit of a mix, from very cold to nice mild spring like weather with blue skies. 

Ophelia snapped on my Iphone on a walk in the park. I love her confidence in choice of clothes. She is really good at mixing colours and style and she loves it.

Felix with the trick scooter he got for Christmas. The picture is taken on my iphone at the Skate Park in Rochester. 
I think he look so grown up in this picture, what happened to my 'baby boy'
