Easter Holiday in Denmark # 1
I wonder if it's ever going to be easy to travel alone with two kids?
Yesterday we arrived in Copenhagen Airport, my Father picked us up as usual and an hour later we were in Korsør where my Mother happily greeted us :-) Today we just hung out at home, the kids had a great time playing with the neighbour's kids and my good friend Mia and her daughter Julia came around for a chat and some freshly baked cake in the afternoon....
I look forward to a week of more hanging out, reading newspapers, playing with the kids and catching up with friends and family. My sister and her boyfriend arrives tomorrow and Alistair on Thursday night. It's going to be a fun week :-)

Weekend food
Most weekends Alistair is the cook in our house! He loves cooking so I'm always up for a treat. This Saturday when I got back from work, he made a wonderful spagetti with meatballs, smoky paprika and fresh parmasan. And tonight he cooked us a lovely meal of chicken wrapped in parma ham with oven roasted potatoes and salad.

Friday morning - It's holiday for some....
What a glorious morning, the sun is up early and is warming us through the windows. It's all ready really warm outside. The kids are having a picnic with Anne Sofie (The Au-pair) in one of the local parks, Jackson Hill. and I'm working in the shop :-)
I just taken some sausage rolls out of the oven and put in the Chocolate Banana muffins.
Felix helped me bake both things, he got so exited when he cracked the eggs in the bowl and none of it came out on the table, that he did a little dance shouting IM A BIIIIG BOY NOW!! So cute...
Ophelia is doing creative stuff at the dining table, I just had a peak and there are glitter EVERYWHERE. But we don't have time to hoover now, so that will have to wait until tonight.
Before we go I have to cut Felix hair, poor thing he can barley look out his eyes!

Wagon wheels
I found this very easy recipe in one of my Jamie Oliver magazines.
Wagon wheels are marshmallows melted between 2 biscuits covert in dark chocolate and roasted coconut.
Easter fair
It's officially Easter holiday. Ophelia had her last day at school today and there was an Easter fair as usually in the afternoon, all the kids bring along a home made Easter bonnet and at the end of the fair there is a parade, and a winner from each class for the best bonnet.
We also bought some raffle tickets and were the lucky winners of 2 prices, lots of easter eggs :-)
The whole week the weather has been fantastic, today we reached a high of 23 degrees.
All the Magnolia trees are in full bloom, they are in my opinion the most beautiful trees in bloom.
We are off to Denmark next week and I just checked the weather forecast. To my chock and horror the weather next week in Denmark is going to be really cold, we are literally talking a 20 degree drop in temperature. I better get those winter coats out from the cupboard again...

Easter eggs
We are getting ready for a week of fun in Denmark over Easter. We are flying out on Monday and are staying for a week. My dear Mother is 60 on Good Friday and we are all going to be there to celebrate her.
At home we have started to put up a few Easter decorations, I love the old fashioned paper eggs that can be filled with sweets and chocolate, they remind me of my childhood. I also got a small selection of same type of eggs just in metal.
I bought some pussy willow branches last week, they are so pretty and look great with some small vintage wooden eggs hanging on them.
