Dairy Free (Lacto Free) Banana Muffins

Since we found out that Felix is lactose intolerant we have had to change quite a bit of his diet and his choice of food! But I found out that a lot of our favourite baking recipes easily can be changed to his needs and without taking away the great flavours! A family favourite are the Banana Muffins.

I simply just change the butter to a good quality organic sunflower oil and voila the muffins comes out just as wonderful as always :-) 

Here is the latest version, dark chocolate and blueberries baked for our day trip to Egeskov Slot in Denmark!

The best sledging hill in town....

Finally the snow arrived in Medway and we had our fair share overnight. What a delightful sight this morning, the kids were over exited and out in the snow just after breakfast!! Al did the clearing of the drive and quite a bit of the road with help from next door.  I baked 'Fastelavns boller' (A sweet bread roll filled with custard and jam that we eat in Denmark up to the start of Lent). After lunch we hit the best sledging hill in town - We had so much fun.

Spiced Apple Cake


This lovely cake comes from an old cook book my Mother in-law gave to me.
After this picture was taken, I decorated the cake with a icing made of icing sugar, fresh orange and apple juice and 2 tsp of cinnamon. 


This is what you need:



175g Butter, softened
175g caster sugar
3 eggs, beaten
175g self-raising flour
2 tsp ground cinnamon
2 apples, cut in small pieces
2 tsp apple juice or milk
a small handful flaked almonds

  • lightly grease a cake tin, I used a bread tin, but you can you anything you like. If you bake the cake in small muffin cups reduce the baking time and if you do as I did, increase the baking time.

  • Mix together butter and sugar until light and fluffy. Gradually add the beaten eggs.

  • Sieve the flour and cinnamon and fold them into the mixture. Then mix in the apples, the apple juice or milk to a soft dropping consistency.

  • Sprinkle the flaked almonds around the base of the cake tin and spoon the cake mixture on top.

  • Bake the cake in a preheated oven at 180˚ for about 30 min (Mine took nearly an hour due to the size of tin i used) When a skewer comes out clean the cake is done!

  • Leave the cake to cool in the tin before transferring to a wire rack to cool completely (if you can wait) You can serve the cake with vanilla ice cream for the extra wow factor....

A day off with Felix

Friday is one of the days Felix is not in nursery, so I decided to take the morning off with him. I was supposed to work from lunch time onwards, but we had so much fun that we stayed home until we had to pick up Ophelia from school. We managed to build a large train track, fight with swords (I had to be Captain Hook and Felix Peter Pan). We also baked sausages rolls, made pictures and had a few games of Hedgehog.

Sausage rolls the Danish way

This is really easy, it's a bit of a cheat - but who cares?

All you need is a bread mix like the one you see below or something similar, a pack of 'Frankfurters' an eggs and optional you can sprinkle with either sesame seeds or black onion seeds.
