Chocolate & mandarin marbled cakes
These little moist marble cakes are easy to make and taste divine
Ingredients:
125 g melted butter
100 g caster sugar
3 eggs
1 1/2 tsp baking powder
200 g all purpose flour
1 tsk vanilla sugar
150 ml full fat milk
100 g dark chocolate
2 x mandarins or clementines
12 hole muffin tray or a square cake tin aprox 23cm x 23cm
Paper muffin cases or baking paper
Method:
Whisk butter and sugar well. Whilst whisking, add the eggs one at the time. Mix the baking powder, flour and vanilla sugar, and sift it all into the mixture, finally fold in the milk.
Divide the mixture in two bowls.
Melt the chocolate and mix it in to one half of the mixture, add the zest of the two fruits to the other half.
First add the light mixture to the cases and then add the chocolate mixture on top, use a fork to create the marbled effect.
Bake the muffins in a 170˚ preheated oven for approximately 25 min add 10 min if you are baking a cake.
When the muffins come out, let them cool of slightly, then skewer them gently with a fork and drizzle with the juice from the two fruits.

I love Dig
Felix is now 3 1/2 years old, and he's speech is getting better all the time, but when you have a child that is learning two languages (growing up bilingual) you end up having some rather funny sentences.
This morning Felix lay next to me in bed, he looks at me, touch my face and says 'I love dig' (dig/you) and later on he says 'Mor I'm killing you' (Mor/Mum - kille/tickles)
and in the car he will often say 'Mummy please crash bilerne' (bilerne/The cars)
One day my little big boy will manage to speak 2 separate languages just like his clever older sister.
until then I will just enjoy his own little wonderful language.
