It' been raining all week (Except from today, Hurray!) So business has been awfully slow in the shop, and it hasn't helped that we are back in recession (Were we ever out of it?)...
However the week has been productive in other ways, I have managed to tidy up 50% of my office, phew there is still at lot to do, but I will get there.
Hubby left the building Thursday morning (He will be back tomorrow night though) he's away with work at conference in Madrid. I'm taking the kids to the cinema tomorrow! On Saturday mornings most cinemas in UK have this great family deal at 10am they are showing 'old' family films for only £1.00 pr person, brilliant! So tomorrow we are going to se the Smurfs and get lots and lots of popcorn!
Afterwards I will be working in the shop and Anne Sofie will look after the kids.
Then very early Sunday morning Hubby and I are going to drive up North for a wedding
(only a 7 hours drive) The children are staying home with Anne Sofie (Lucky her) And we should be back just in time for picking the kids up from nursery/school Monday afternoon.

Slow roast Moroccan Lamb
Over Easter my Mother and I cooked this lovely slow roast lamb dish. I got inspired from a lunch I once had with some good friends.
We cooked a large leg of lamb on a bed of potatoes for about 4 hours. We served the lamb with a Moroccan salad, humus, flatbread, feta and tabouleh. A truly wonderfully tasty dish.
Tabouleh
Ingredient:
Bulgur
Tomatoes
Juice from 1 or 2 lemons
Big bunch of flat leaf parsley
Big bunch of fresh mint
a bunch of spring onions
Olive oil
Sea Salt & Freshly Ground Pepper
Cook the bulgur (follow the instruction on the package)
Drain when cooked and set aside to cool
Cut the tomatoes in small pieces and remove all the seeds
Finely chop the spring onions, mint and parsley
Mix it all into the bulgur, add the juice from the lemons and stir in a generous splash of olive oil
Season with salt and pepper
Moroccan salad
Ingredient:
1 large mixed bag of small salad leafs I used baby spinach and rocket.
2 pomegranate fruit
Roasted red peppers from a jar
2 cloves of garlic
olive oil
White wine vinegar
Ground cumin
Ground chilli
Juice from 1 lemon
a large handful of almonds
Start off with roasting the almonds on a dry pan for a few minutes and put them aside to cool.
Release all the seeds from the pomegranate (This is a bit messy)
Slice the peppers
Mix olive oil, lemon juice and white wine vinegar then taste with ground cumin, chilli, crushed garlic, salt & pepper
Dress the leaves with the dressing and arrange on a large plate or bowl, scatter the peppers, pomegranate and almonds on top.
Serve immediately.

Easter in Denmark # 2
We had a wonderful Easter week in Denmark, the weather turned out much nicer that first estimated, so we had some nice walks on the beach and the kids played in the garden and went out on their bikes. On Good Friday My Mother turned 60 and she was celebrated with style, we started the morning with a lovely brunch in a restaurant located in the forrest, followed by having guest around for drinks in the afternoon and for dinner Alistair cooked us a wonderful meal.
Sunday was spent with friends, having a proper Danish Easter Lunch. 14 adults and 11 kids. We had so much fun, the food was superb and the wine tasty...
Monday evening we traveled back to UK - Now another week has almost gone, the kids are back in school/nursery on Monday, back to normal - But first it's weekend, time to relax...
