Overripe Bananas (Great muffin recipe)

We use this muffin recipe every time we have overripe bananas, it's super easy, and only takes 10 min to mix up. We also vary the ingredients once in a while, like today we added a handful of blueberries. Here goes:

Chocolate/Banana Muffins - Makes 12 large muffins

You will need, 2 x 6 hole muffin tin (or one with 12 holes), 12 x Paper cases

100 g Good quality cold butter, cut into small pieces
225 g Self raising flour
75 g Caster sugar
2 large (or 3 small) ripe bananas, mashed roughly
2 Eggs, beaten lightly
2 tbsp honey
50 g chopped dark chocolate (or chocolate drops)

  • Sieve (strain) the flour into a mixing bowl
  • Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs


    • Stir the sugar, chocolate, bananas, beaten eggs and honey into the dry ingredients. Mix together with a spoon to form a soft dropping consistency.


    • Spoon the mixture into the muffin cases

    • Bake the muffins in a preheated oven 160 degrees celsius for about 25 min
    Cooking tip : you can also add a small handful of  blueberries to the mixture or use dried dates instead of chocolate, we have also tried a strawberry/banana combo which was yummy - Happy cooking :-)
