Chocolate/Banana Muffins - Makes 12 large muffins
You will need, 2 x 6 hole muffin tin (or one with 12 holes), 12 x Paper cases
100 g Good quality cold butter, cut into small pieces
225 g Self raising flour
75 g Caster sugar
2 large (or 3 small) ripe bananas, mashed roughly
2 Eggs, beaten lightly
2 tbsp honey
50 g chopped dark chocolate (or chocolate drops)
- Sieve (strain) the flour into a mixing bowl
- Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs
- Stir the sugar, chocolate, bananas, beaten eggs and honey into the dry ingredients. Mix together with a spoon to form a soft dropping consistency.

- Bake the muffins in a preheated oven 160 degrees celsius for about 25 min
